I love avocados and in my opinion one of the most tried and true ways to enjoy them is as Guacamole. Surprisingly there are lots of different ways to make it, but I like to keep it super simple and let the creamy fruit be the star! Yes avocados are considered a nutrient dense fruit because they fit all the botanical criteria for a berry. Crazy, right?! The best part about an avocado next to the taste of course is that they are considered a super food!
The goal in my kitchen every day and for every meal is to make it as nutritionally delicious as possible. One of my number one foods I like to keep stocked is, you guessed it, avocados. You can seriously do so much with them, plus they are chalked full of vitamins, minerals and my personal favorite, healthy fat! Yep I said it FAT. I know that is a scary word, because we’ve all been taught that fat = bad. But in the world of avocados it’s the opposite because they contain heart healthy monounsaturated fatty acids which have been shown to lower LDL (the bad) cholesterol and increase HDL (the good) cholesterol. So they are good for your heart, that must be why they are LOVED by so many! Now they say too much of a good thing can be bad for you, but who can stop at just a few dips of guacamole? Not me I know that. But this is where I feel balance and an overall healthy diet and lifestyle comes in at. So go ahead and dip, dip, dip again. Just don’t add in those not so good for you fats throughout the day, keep it clean and replace the bad with the good, move your body, and don’t fret that you just devoured that whole bowl of guac!
Now grab a bowl of chips and dig in! This will never let you down at a party it’s always a hit plus it’s quick and easy to make!
Natalie’s Guacamole (serves 6)
- 4 Avocados
- 1/8 tsp. lemon juice (plus a little more on top & cover with plastic if you need to store for a bit)
- 1/8-1/4 tsp. Garlic Salt
- 1/8 C. Diced red onion
- 1/2 C. Diced tomatoes
In a large bowl add the first three ingredients, then use a fork to mash for a chunkier texture or a immersion blender for a creamier super smooth texture, both taste Amazing! Then add in the diced tomatoes and onions, stir, test and add more garlic salt if necessary. But keep in mind your chips will most likely be salty so don’t go overboard!
